Well I’ve been a busy fool! I feel like time is flying by really fast, faster I actually think. Seasons and times are changing. Just typing this up is making me feel a little dizzy. Whew! Anyway I have a few things to share. Like pictures and tasty food!
First off, for thanksgiving Nanette and I made gluten/sugar free mini pumpkin pies.
Except we replaced sugar with coconut sugar and for the milk, we used almond milk. It tasted just as good
Then, I guess it just hit some kind of baking nerve and I ended up randomly making some of the best cookies I’ve ever made. They’ve got a little bit of guilt (hello white flour and butter) but they’re still so delicious. 5 words: pumpkin oatmeal chocolate chip cookies. I used this recipe as a base:
But I did change a few things. I did half a cup of white flour and half a cup of oat flour, a cup of coconut sugar instead of the half cups of white and brown sugar and I added a teaspoon of cinnamon, nutmeg, and ground cloves. I got creative. And it paid off
